Hey Grizz!
I was in a hurry last night, and Shaked & Baked some trout I caught last Oct in the LLM.
Baked it for about 12 minutes, and that was the best fish (outside of sashimi) that I've ever tasted.
It had a lot to do with the shake&bake stuff, but that's all I had!

Salt Water. Sillaginodes punctata King George Whiting, or any Whiting Species for that matter, would be one of the best Bread & Butter fish down here, followed closely by Platycephalus speculatorFlathead and then Acanthopagrus butcheri Black Bream. Baked would have to be Chrysophrys auratus Snapper. I'm yet to land a Yella Terra "Yellow Tailed King fish" same as up there,Seriola lanlandi Excellent fighters, can be compared to fighting with Pylons lol, Up north they have some Black King's "Cobia" my guess is they taste just as bad. Scomberomorus commerson Spanish Mackerel taste better than Barramundi anytime , in my books. Sweet water: Would be Salmo trutta Brown Trout Fresh from on the Banks of the Hutt & Broughton river's junction MMmmmmmm

By far the best fish to eat in the ocean is the Louvar. I don't believe it can be caught here in the gulf but when I owned my restaurant in San Diego and commercial fished, it was the best incidental catch you could dream of.
