That is a tough question. I would have to rate ling, scamp grouper and amberjack way high on the list. Yellowfin tuna is great too. Never got to taste wahoo but I hear it is great. I guess my favorite would be whatever I happen to be catching at the time.

If I could only get to eat one kind of fish from the Gulf, it would HAVE to be amberjack.

Easily YFT sashimi for me!

Especially after a fillet has been slightly chilled -never frozen- and sometimes with a bit of wasabi/ginger/soy.

Cooked it would have to be Wahoo.

1.YFT
2.Mahui
3.Wahoo
4.Ling/Cobia
5.Amberjack
6.African Pompano
Honestly I am happy to eat any of these on any day. Hard to put one infront of the other they are all great tasting.

Inshore
1.Florida Pompano
2.Snook
3.Triple Tail
4.Redfish
5.Trout
6.flounder

Inshore it is hard to beat the top 3. Think they all are tied to for 1st in my book. Great eating. Then the redfish and trout and flounder.
