Of course my opinion is bias, but I believe the design of the Lure and hook you use could be the problem on poor hooking.
In fact we believe the larger the fish the more likely you are to miss it, do to the physics involved. Send me your info and I would be happy to send you a NuJig and see if things don't improve. If your not familiar with the NuJig here is a link that will introduce you to the technology with some nice hook sets at the end to prove the science.

in my opinion, i do not think there is such a thing as setting the hook too quick with a jig. they pretty much suck it in. the only exception to that rule is dealing with smallmouth and kentuckies. they tend to pin a jig to the bottom lots of times before taking it in. then is the only time you need to wait for that second feel. every second you wait to set the hook the further back into cover the bass is going with your bait. this will lead to bad hookups and you are already in trouble in trying to get that bass out.
