Life has gotten in the way of me working on my pontoon. I have come up with a new scheme to add some buoyancy. I have a second pontoon boat, I think that I can mount one of that boats pontoons in the center. That extra pontoon should increase the max weight by 200lbs. Does this sound like a plausible idea?

I think you may alter the stability and be harder to move with too much resistance. Still too much weight.
If you enjoy the pontoon platform, you can sell that one and get you one that has a bigger weight capacity. Otherwise try to get a canoe or a kayak. There are many options out there rated at a higher weight cap.
For your trolling motor issue. I have seen some with it mounted on the front of the craft but you have to add a foot platform.

Ash58- you might consider the aluminium one man pontoon boat by Pond King.  Weight limit is 400lbs and they are built to last. http://www.pondking.com/pontoon-boats

I would try to sell it. If you do, consider getting a Sea Eagle Fold Cat. I have one, fits in the back of my car and fishes one to two people comfortable all day. Great to get in the shallow water of creeks. Not good in high wind, but you cannot sink it.

I have a sea eagle 12 foot yak. 650 pound capacity . my bud is is 6' 5" 0ver 330 pounds works good for him too.
