what is the best way to cook shark and kingfish? shark is filayed, the guy cut the king into steaks, said pop out the 4 little steaks??? i dont have any idea wth he meant..
i figured on the grill, but could use some tips.. thanks
youtube not as helpful on this one..

shark should be fine seasoned and grilled, i prefer steaks, but fillets will work. kingfish: what he's probably saying is the 4 layers within the steak, closest to the bone, but stay away from the dark, red line, but they grill ok. also good cut into 1"x1"x6" strips, marinate in teriyaki and honey for a couple hrs then smoke or grill on low until somewhat dry...excellent.

Kingfish recipe:
1. Cut off the dark meat 2. Mix a cup of full fat mayo with juice from a lime and Tony's 3. Lay kingfish on tinfoil and cover in the mayo mixture 4. Grill on the foil at 425 with the grill lid closed for about 12 minutes
Enjoy.

Here's something different but very tasty.
Kings: -cut out all the red meat -season liberally with Chef Don Pruhomme's Blackened Redfish Magic -heat a cast iron skillet over outside grill on high heat for 25 min. -melt butter or olive oil on skillet and then put on fillets. Couple of min. each side until meat is flaky. -Serve with dirty rice and garlic butter.
Shark: -cut into bite chunks -toss with spicy mustard -bread with Tony Chachere's seasoned fish fry -deep fry -serve with french fries, hush puppies, cole slaw

You wont like the kingfish... I wont even eat 'em. Too oily ...and yes, I've heard all the milk/brine tricks...but I still wont eat them.

OldFrog, I thought the same thing and had nearly given up on them when I read the mayo/lime juice trick I posted above. Try it...it's good. I caught a monster spanish Mac a few weeks ago and used the same recipe. It's good...give it a shot.

Oh man i Love king fish!!! W cubed up the white meat and batter and deep fry it taste awesome!! Through in some hush puppys and a little cole slaw on the side!!!! OOOO WEEEEE
