i prefer fried with fries and hushpuppies but Fear is trying to make me eat healthy. here is a pic of the second plate at dinner tonight.[ had to make sure it was good before taking a pic]. it was blue cat with a horseradish seafood rub rolled in panko bread crumbs, with roasted sweet potatoes and green beans,and remoulade sauce instead of tarter sauce. pretty good stuff.

Catfish is also really good grilled with william's ribtickler. Served with red bean's and rice.

I like 'em fried in Zatarains (or equivalent), plain corn meal, blackened, grilled, in a koo-be-yon (court bouillion), and just about every other way that they can be cooked. I'd sushi a catfish if I didn't know that they ate SureShot and other similar nasty things.

At our family fish frys: Fried catfish cornmeal/Zatarans, Fresh cut red potatoe fries, hush puppies (spicy), homemade onion rings, beans and coleslaw.
And for me steamed spicy shrimp. Yes I'm not big on fish. I love to catch em, clean em and cook em for family and freinds but don't much care for fish. But I'll eat it with cocktail sauce.
I guess that makes me the "perfect fisherman" cause I save more fried fish for others.LOL

Start with the whiskey or some of you like beer and get the sides ready first. Hold off on the fish until they have consumed enough drinks and they will eat the sides. After they have started eattin the sides then bring out the fish. I had fried blues, fried yellow squash, and hush puppies last night. The blues were caught yesterday morning and the squash came out of my neighbors garden yesterday. I like to start with a few shots of whiskey straight up and then I am ready to eat. For desert I like a few more shots of whiskey straight up. Forty Creek goes down real smooth. I did eat healthy last night because I fried it all in peanut oil. lol !

When we cook fish here for just the family it's usually the fish either fried or grilled and three sides. I prefer ,with my fried fish, Green bean casserole, baked beans and some garlic bread. With baked fish we go with rice, regular green beans and a salad. If we're doing a large fish fry I start out by baking the fries for about 3/4's of the time they are supposed to cook that way you just splash them in and out of the oil so they cook super fast and get nice and crisp. Once I get my oil heated up I throw in about 2lbs of Cheese sticks and that's what I get the party really started with. The kids and adults alike love them. When we do a big fry I also make my baked beans on the smoker and we'll do up a bunch of garlic bread too. We never have an odd ratio of fish to sides consumed. I always get my guests good and hungry with horseshoes and washers before we eat. One thing we have recently added is the corn nuggets. They're awesome. I don't know why but we hardly ever cook hushpuppys.

next time get some sliced jal.peppers pour the juice off and put them in the fish cornmeal and fry them until crispy ....they be goooooooooooood !!!
