After getting the idea (here) to not skin cats I decided to try it this summer.
One question : How do you people cook your catfish ?
The skin began shrinking immediately after making contact with the oil. The fillet ended up looking like a (no) pig in a blanket.
I recommend skinning from the head down and filleting from the tail down.

I recommend skinning from the head down and filleting from the tail down. Once you get the fillet cut do it just like you would a Crappie & run the fillet knife between the filet & the skin to remove the skin from the fillet.
A bad day on the lake is much better than a good day at work!

Doesn't that waste meat ? (I've never skinned anything but cats, btw.)

It's eaiser to ask for forgivness, than to beg for permission! PB red 7 lbs. PB blue 21 lbs. PB yellow 4 lbs. PB channel 6 lbs PB common carp 15.7 lbs (Lake Mckeeney record)

The count is in. Fillet it is. Now I got to go fishing. Got another 1 1/2 inches here last night to go with the four inches last week and they call for 30 to 40 percent chance all week. Colorado still is not running enough to help Buchanan much. Thanks for all the input.

Take the catfish and place it on it's belly. Take your knife and cut along side of the back bone till you get to the rib cage. Cut around the rib cage and lay fish on it's side and fillet down the back bone to the tail. Flop fillet skin side down and peel skin like you normally would. This method keeps from dulling your knife. Try IT.

Not so, and if you skin a catfish, you are only removing the thickest layer of skin , that grey , greasy layer, that is left after skinning is why some catfish taste too fishy. Try some both ways , I think you will like the fillets that had the skin filleted off much more tasty. MO

But when I fillet catfish or crappie, there is no meat left on the skin so no meat is wasted, only skin to throw away and only filleted meat left. I use my electric fillet knife, it's fast and easy.

Fillet them, but there's a little trick to it. After you make your first cut flip the fillet over like you would with any other fish. Then, instead of running your knife down the fillet put your knife on the board and PULL the catfish into the knife. You won't end up with a bunch of skin still stuck to it that way.

I'll take your word and give it a try. I've never used an electric knife. How hard is it to get used to ?
