I make my own batter.
3 parts yellow corn meal 1 part flour Lawry's Seasoned Salt Garlic Salt Cajun Seasoning Black Pepper
After they are fried I sprinkle more cajun seasoning on them. Very tasty.

Dip in egg. coat with a crushed Cheeto's and lemon-pepper mix. Fry til they float.

Same here. Cornmeal, salt and pepper and then wash it down with a cold Miller Lite!! Same for catfish and sandies!!

he he, I almost slapped my monitor to get that pesky gnat.... anyways my wife uses Japanese breadcrumbs from the local Asian supermarket. Its made from rice and I like it alot better than cornmeal.

Soak in Butter Milk for about 2 hrs Cover with Louisanne Fish Fry Add Seasoned Bread Crumbs, Lowerys Seasoning salt about a table spoon , Place Dry Mix in Plastic tub and coat fillets cook in Hot Oil till golden Brown about 3-4 minutes cooking oil temp 375

Posts like this come up every now and then. Lots of good recipes always posted. However, I still prefer mine the most simple way. Cornmeal in a big zip lock bag, add salt, pepper, paprika, and of course Crappie. Shake to coat and drop in hot vegetable oil.  +1 and a glass of Crown on ice!!!

man.. i guess im simple, or crazy.. but i like the taste of the crappie filet itself so i go a little easier on the batter additives. doesnt take much to make the perfect crappie filet, and i think you can combine a few too many ingredients in a batter and start taking away from the simple goodness of the whole deal.. sometimes less is more. 3 parts cornmeal 1 part flour salt/pepper/maybe a dash of lawrys peanut oil heated to 350 for about 3-4 minutes
