How do you bread your crappie fillets for frying???

I have used a dozen or more different batters and coatings to fry my fish with...I like them all but I am curious what you folks like the best...
Give it up...

I use either a dry Zatarains batter or we use 1 egg to about 2 cups of milk and season corn meal. But I don't think you can go wrong with whatever you use.

oh yeah...the beers for drinking...nothing to do with the cornmeal. I don't like beer battered fish...just shrimp

If I am pan searing it I use panko and pecans. If deep frying, 1 part flour, 1 part cornmeal, 1 part Italian bread crumbs.

 IMHO if you want to actually taste the BEST eatin fish in the world, just drag the filets thru milk and dust with 1/2 corn meal, 1/2 flour with salt & pepper to taste then drop into hot peanut oil. I save all those other flavors for the catfish, flounder, whitefish etc.

uncle bucks fish fry from bass pro.....just dip fillet in cold water, coat with mix and deep fry till it floats...oh yeah, get the SPICY!!!

White corn meal. Add salt and black pepper and a hint of cayanne. I never buy pre-made batter. Real good eatin.

If you want to take it to a new level. Try soaking them in buttermilk before you shake em in yellow corn meal with Tony Chasheres seafood seasoning. When you get through eating, take a 2 hour nap and you will be heading back to the lake to get some more.

Cover filets with the thinnest possible sheen of regular old mustard, just enough to wet; then coat with this mix:
Mixture of 80 percent panko bread crumbs and 20 percent corn meal. Roll the crumbs with a rolling pin first to get a denser coating; sounds like a hassle, but only takes a couple of minutes. Add Lowry's seasoned salt and fresh ground pepper to taste.
Result is very crunchy, great tasting filets. I cut the filets into large chunks, 2-3 bites per chunk.
