My favorite food in the entire world. Never found a preparation I disliked. Tasted my first one about 4 or 5 years old and have been hooked since.

I love them raw, grilled, steamed, fried. One of my favorite ways is to lay them out on a hot grill over coals, as they start to get hot the shell will open, lift the top off and ladle some melted butter with fresh lime juice, chopped garlic and fresh cilantro into the oyster, let that cook a bit and then slurp em up, larapin good. I had them at your place last week on the half shell. Those things were giants! Tasty, but huge!

Last few years the hordes of oyster people have really hurt our trout fishing, there used to be miles of oyster reefs that were great habitat. They've flattened all those reefs, and now they've had to shut off the harvest. People can sure ruin a good thing sometimes. Nope…snot in a shell…the equivalent of taking all the gross boogery fat cut off some cheap steak and saving it for an hors’d’oeuvre…  I like fat too
