Sugar can also be used to reduce intensity of chili. That's what beans are for.

I guess it's really a thing? Never have done it. Don't see me trying it either. It's an old Italian Grandma trick I learned from my buddy Jesse's Memaw. The sugar cuts the tomato acidity and allows for longer simmer times without turning the acid harsh.

Great idea - just what we all need - more sugar in our diets. You only do this if you're making it from scratch. Those store bought jar brands have sugar added already.

Adding to sugar to Sugo is an American thing.
Any authentic Italian recipe would never include adding sugar.

It just drops the acidity. You can also put a chunk of carrot in to do the same thing. Real Fun Fact: Carrots will also change the color of your doodie.
