grew up eating salmon croquettes.....had opportunity to eat fishly caught salmon cooked on grill in alaska...it was very good.....

Never was a big fan of cooked salmon until the past few years, it has to be grilled to perfection ( barely done ) and I like a garlic / lemon/ butter seasoning, served with a big salad with pablano ranch dressing.

I used to work in a Retail/Wholesale seafood store in Chicago. Our most of our fish was flown in fresh everyday. We would filet it everyday and put it out in the Retail store to sell or box up and send out to restaurants in the Chicago area. That Salmon (many varieties) was VERY good. Our Salmon around here not so much. Previously frozen salmon is horrible.

The medium rare part is key for me. Overcooked is not good.

Love salmon! But it's freaking costly to get the wild caught. Those farmed raised fish are horrid and bland.

All that might be true, but polarizing fish here would be a gafftop.
There's a lot of people who actually try to catch them.

Aldi has a good price on wild caught filets, vac pac, fresh.
