Go to your local meat market and buy your steaks. They will be all better than HEB, Costco, Kroger etc.... and their hamburger is far superior. Ribeye and sirloin are my two favorites This is no guarantee. There are some places that do deals with certain growers and are excellent. Over the years I have been in the cooler of some and they are buying the exact same boxes of meat, ibp for example, as every other grocery store in the world. Beef processing is dominated by a couple massive companies.

Texas Roadhouse chili is the best in Texas.
I had a bowl of that a few weeks ago and it wasn't bad.

I'm convinced the world of prime has got a little shady. Me too. A decade or so ago I could not find prime meats in my area...only restaurants had it. Then Costco started carrying it...now Kroger and Walmart stock prime meats. Are there more prime grade beef cows today? Or, have the standards been lowered as to what constitutes prime? Feels like the latter to me, but that's just a guess. They say the quality of the overall herd has improved. Remember the the whole cow is graded not the individual cuts. It have had some awful prime at times and some really good choice if you eyeball them. [/quote] This is the case. The past three decades have brought incredible progress when it comes to beef quality and consistency. Last year, CattleFax reported nearly 80% of the U.S. beef supply graded Choice and Prime.

Ribeye and sirloin are my two favorites We have one the next town over. The meat is the best I've had in years. Cut doesn't matter rmuch. It's all superior to the grocery store meat. In both tenderness and flavor. The town has less than 2000 people. The meat market sits smack in the middle of an old neighborhood. Grandfathered in. You pull up and the cattle are fenced in behind the building. Which one would expect at a butcher. It just cracks me up that it's in the middle of a neighborhood. The owners are always super nice also.

When I was little, my grandpa used to go pick up meat at the butchers on Saturdays and the butcher would let us go in the back and punch on the sides of hanging beef just like Rocky

Hypothesis: A $20 prime ribeye will taste better than $5 (on sale,) NY strip. Experiment: Grilled both steaks simultaneously over charcoal and oak wood chips to medium-rare perfection. Conclusion: Ribeye was superior, better flavor and more tender. "Buttery" sums it up. Was it 4x better to justify higher cost? Yes, yes it was. I would suspect that a $5 on sale ribeye would taste better than a $20 NY strip. Just a better cut.

Ribeye is the king of steaks to me, yeah I'll get blasted for saying, but it's what I prefer. You can keep your porterhouse, filets, etc. Give me a good old ribeye and I'm happy! yes sir. Best steak off the cow.

The ribeye is the king of steaks. That's all there is to it.
I've never met a well-done filet man, but you know they're out there. Find that son-of-a-gun and science that dude out. There's an experiment. You know a dude like that is gonna be weird. Probably wears his socks on the wrong feet.
