I'm convinced the world of prime has got a little shady. [/quote]

Me too. A decade or so ago I could not find prime meats in my area...only restaurants had it. Then Costco started carrying it...now Kroger and Walmart stock prime meats. Are there more prime grade beef cows today? Or, have the standards been lowered as to what constitutes prime? Feels like the latter to me, but that's just a guess.

NY strip is just a glorified sirloin. An average ribeye will be better than a prime choice. NYstrip any day.

Retirement best job ever.

They say the quality of the overall herd has improved. Remember the the whole cow is graded not the individual cuts. It have had some awful prime at times and some really good choice if you eyeball them.

Ribeye's are delicious. On occasion I will cut the medallion out of the ribeye and grill it...looks a bit like filet mignon but tastes better. I grind up the rest of the ribeye and use that to make some truly decadent smash burgers.

Go to your local meat market and buy your steaks. They will be all better than HEB, Costco, Kroger etc.... and their hamburger is far superior. Ribeye and sirloin are my two favorites
