Never tried them but today will be my first. Manicotti shells stuffed with breakfast sausage,cheddar cheese and BBQ rub. Wrapped in bacon then more rub. Going to fire up the smoker soon and throw these on with some country style ribs.

No, just the hard shell. The bacon softens the shell to an al dente consistency

I'm going to let them smoke at around 250 for 2 1/2 to 3 hrs. until the bacon crisp to where I want it.

There are tons of youtube videos on making these with different variations. I'm just going with something similar to what I've eaten.

I use spicy sausage . diced jalepenos , shredded cheddar cheese and shredded frozen cream cheese

Diced jalapeño is a good idea, used Jimmy Dean Hot for the sausage.
