Smoked Shotgun Shells - 06/11/22 05:23 PM

Never tried them but today will be my first. Manicotti shells stuffed with breakfast sausage, cheddar cheese and BBQ rub. Wrapped in bacon then more rub. Going to fire up the smoker soon and throw these on with some country style ribs.

Popular bbq appetizer but I've never smoked them.

Are they parboiled or anything?

Re: Smoked Shotgun Shells - 06/11/22 05:32 PM

No, just the hard shell. The bacon softens the shell to an al dente consistency

I'm going to let them smoke at around 250 for 2 1/2 to 3 hrs. until the bacon crisp to where I want it.

It’s bacon and sausage and cheese all at the same time. It doesn’t take a scientist to know this will be the greatest thing ever.

There are tons of youtube videos on making these with different variations. I'm just going with something similar to what I've eaten.

Diced jalapeño is a good idea, used Jimmy Dean Hot for the sausage.

Thanks, BBQ is my hobby thanks to osteoarthritis in my knees. It's the one thing I enjoy most!
