Each year our coordinator orders a certain number of chicken halves and tells them how much we want them to weigh. We normally get 2.5-3 pounds halves (IIRC) and one year someone made a mistake and ordered 4-4.5 pound halves! Of course if I do have a whole chicken I’ll smoke the breast. By the way that’s the only breast to smoke. Those bone removed breast dry up way to fast. The bones hold in flavor in a little juice. I little more $ but well worth it IMO because of the taste and it is never tough. The pieces don't look like turkey sized breasts.
