So I saw the OPs final dish and thought why not bread and fry the bacon wrapped pheasant. I tried it and it was great.

Look up cream of mushroom pheasant and thank me later!! Cut in strips and chicken fry. Best I have found. Both of these are what we do. Pheasant is one of my favorite eating birds. We’ve done an orange duck recipe where we used pheasant instead and it turned out pretty good as well. So I cut all breast meat off the bone, half I wrapped in bacon and grilled, and the others I soaked in egg/milk, dunked in bread crumbs and fried. All of it was really good. Made some gravy to go with it too. Looks like you did a great job!

Tenderize it and fry like steak fingers. I just read another option where a guy took the pheasant and ground it with bacon and spices to make breakfast sausage. This may be the way to go. I think it was on the THF.
