So I saw the OPs final dish and thought why not bread and fry the bacon wrapped pheasant. I tried it and it was great.

Both of these are what we do. Pheasant is one of my favorite eating birds. We’ve done an orange duck recipe where we used pheasant instead and it turned out pretty good as well.

Tenderize it and fry like steak fingers. I just read another option where a guy took the pheasant and ground it with bacon and spices to make breakfast sausage. This may be the way to go. I think it was on the THF.
