I was given 3 whole breasts, figure I'd cook them this weekend.

I've never cooked pheasant but the guy I got them from said just wrap'em in bacon like you'd do dove and put on a smoker to 155.

What say the TFF?

Start out like frying chicken , Brown only ,

put pieces in a covered pyrex cooking dish. Cover with evaporated milk, bake at 350 about an hour( most of liquid should be gone).

this is about the best way i've cooked pheasant. it's a tasty, but dry meat. the other favorite of ours is to cut the breast meat into fingers, soak in a milk/egg wash and rolled in your favorite batter. we like bread crumbs and fried like chicken tenders. i tried deep frying the whole bird like a turkey, but over cooked all of em. might be better with more practice.

You can separate old birds from young birds by the size of the spurs,
fry the young ones , bake the old ones

No matter how well you think you checked the breast for lead, your wife will always find the one pellet you missed.

We fried it up with bread crumbs. Good stuff.

So I cut all breast meat off the bone, half I wrapped in bacon and grilled, and the others I soaked in egg/milk, dunked in bread crumbs and fried.

All of it was really good. Made some gravy to go with it too. banana

Probably too late for your plans but I agree with chicken fried with mashed potaoes and cream gravy and Englsh peas. Wonderful

If you want to get fancy. Place breasts filleted off the bone between wax paper and use a meat mallet to smash them thin then place fresh baby spinach on flat then diced jalapeno and cheese (I like Colby jack or a good sharp cheddar)and diced cooked bacon. Roll it up and give it a little egg wash dust them with a little bread crumb and put in the oven at 350 for about 20 or thirty minutes. Pretty good stuff, I love me some ditch chickens.
