That is a tough question. I would have to rate ling, scamp grouper and amberjack way high on the list. Yellowfin tuna is great too. Never got to taste wahoo but I hear it is great. I guess my favorite would be whatever I happen to be catching at the time.

Easily YFT sashimi for me!
Especially after a fillet has been slightly chilled -never frozen- and sometimes with a bit of wasabi/ginger/soy.
Cooked it would have to be Wahoo.

Many years ago while fishing a 36 hr trip on Capt. Elliotts boat the Nancy Ann [anyone remember that boat?] I caught three Tile Fish,never seen one before then,That was the best eating fish i ever had,and i have had all the mentioned above,Great tasting fish

1. Grouper 2. Halibut 3. Red Snapper 4. Mahi 5. African Pompano 6. Yellowfin Tuna 7. Tilefish 8. Flounder 9. Yellow Perch 10. Coho Salmon
I have not yet caught a cobia or wahoo. I have a feeling they will make top-five when I do.

1.YFT 2.Mahui 3.Wahoo 4.Ling/Cobia 5.Amberjack 6.African Pompano Honestly I am happy to eat any of these on any day. Hard to put one infront of the other they are all great tasting.
Inshore 1.Florida Pompano 2.Snook 3.Triple Tail 4.Redfish 5.Trout 6.flounder
Inshore it is hard to beat the top 3. Think they all are tied to for 1st in my book. Great eating. Then the redfish and trout and flounder.
