I’ve never heard anyone say they let it come to room temp so it will cook faster. Most people I know do it because the meat cooks more evenly.

I've never let mine just sit out. I salt for 15 mins, pat dry dry and flip, salt 15 mins, pat dry, season 15 mins and flip, season 15 mins, then grill Works pretty good.

I agree, most should all go away, especially the finger poke/touch your thumb to your whatever doneness test. What a load of BS. However.... I will continue to not flip my cooking steak with a fork and will only flip once.

The point is it will never come to room temp. Sure you can let it sit out for 30 mins and warm up some, but it will take a very very long time to come to room temp

I have seen the mess some people post on here, heinz 57 on steaks, worchester sauce, boiled meat, burnt. I'll keep on making rare works of art and ignore the noise.
