I set it on a plate with a wire rack in the frig for five days take it out and salt and pepper it and let it come to room temp and grill it to rare What does the 5 day do for it? Doesn't it go from nice and red looking to brown in the fridge? Aging, makes it more tender. I do it with wild ducks, but not with steak but I have. Salt and pepper is all I care to put on a steak. I like to cook it on hot cast iron.. Full tenderloin from Sams here cut up into steaks..

3/4cup Allegro to 1/4cup Dales, Not on a Good Prime Ribeye though.

I think thyme is the secret ingrained. It was good. I want to try the low sodium dales.

No need to marinate a ribeye. Take out of package, pat dry with paper towel, set on wire rack in fridge for a few days. Take it out, salt/pepper, let come to room temp and cook over lump hardwood charcoal.

Marinate is for cheap steak. High quality steak, salt and pepper. Its not complicated.
