Saltine cracker crumbs. Roll them out till crush fine, cayenne pepper, salt to taste. Cut into 3" pieces dep fry. Old family style receipe.

Equal amounts of Italian bread crumbs and flour. Salt/pepper it some. Then take red/cayenne pepper ( I mix all this in a gallon ziplock) and add LOTS of it....keep adding until the mix has a slight pink hue to it. Take your fillets and cut into nuggets. Well the way you do it in Florida and the way its done here are two totally different things. If you have fish that you need to cover the off taste adding things will help. As for properly cleaned and cared for fish be it crappie or blue cat don't need anything but rolling in corn meal and fry until it floats. Second we don't ever reheat fish but put them in a paper sack and they are excellent cold later that day or the next. We never add anything to corn meal because it just falls off and makes the grease have an off taste/color or burn. You can season the fish if you so choose after cooking, but in fact good tasting fish only require a little salt.
If you want Long Johnny Silvers go get there ole fish cooked in the same oil for long periods. Different strokes for different folks.

We had a fish fry contest at my dads place on Fork once. Had about 10 varieties , corn meal salt and pepper, pre soaked in mustard with corn meal, pre soaked in Louisianna hot sauce with corn meal, beer batter with flour, a Yankee made some with crushed wheaties, I can't remember all the rest, put em all out out on a spread in each pan marked with a number and the hands down winner was Louisianna Fish Fry mix in the blue bag.

Louisiana is good, probably my second favorite honestly. My #1 would have to be Uncle Buck's though. Occasionally I will mix the two and use them together as one batter. Good stuff.

My daddy told me you could go to hell for frying fish in anything but corn meal and salt. Since, it is my only chance of avoiding that demise, I have never wavered. I sleep good at night!

I like it too and I grew up on the corn meal and salt only frying. Louisiana stays on better for me.
