Cornmeal and salt. Add some Tony C's if you want to kick it up. All prepared mixes will have a lot of flour in them.

I like to cut my fish into chicken nugget size chunks.
Make a wash with buttermilk and some of the liquid crab boil concentrate (like you would use for crawfish). More if you like spicy.
Then half and half with Louisiana fish fry and flake mashed potatos out of the box.

Yellow cornmeal, salt, pepper, ground red pepper. This is what I use. I've found that if you bread them ahead of time they will get a little gummy and the meal will stick better. Take a little time and pack each one with your hand to better keep the meal on the fish.

i'm too much old school i guess. straight yellow corn meal, salt, pepper, garlic powder and a touch of cayenne to taste. zaterian's is my second choice.

The last time we fried some striper fillets, we put Uncle Chris' fish seasoning (Fiesta brand) on the raw fillets and let them marinate about 30 minutes. For the breading we used 1 part cornmeal and 2 parts flour - no seasoning. It was some of the best fried fish I've ever had.

Here is my favorite breading for fried catfish:
3/4 cup cornmeal 1/2 cup flour 1 t. black pepper 1 t. garlic powder 1 t. paprika 1/2 t. cayenne powder 1/4 t. celery seed
Dip the fillets in buttermilk and then salt them lightly before dipping in the dry mix.

Been frying crappie filets all my life, tried many different recipes and batters.
My go to is very simple and easy and rarely do I find anyone that does not say its some of if not the best they have ever had.
Canola oil or peanut oil fried about 360-375 degrees.
equal amounts of yellow corn meal and Jiffy corn bread mix, add Tony's, garlic powder, and salt to taste.
Place filet in dry bag with batter, pull out and drop in grease.
I usually use one small box of Jiffy and about a cup of cornmeal.

I also grew up on seasoned cornmeal; however a couple of years ago a customer of mine turned me on to this recipe. Equal parts cornmeal, breadcrumbs and flour. Mix well. Roll your fish in this mixture and fry until they float. Remove from the oil and while they are still glistening sprinkle with Tony's. This has become my wife's favorite.
