Season crappie with salt and pepper and sauté in butter until golden brown on each side. You can dredge the fillets in a little flour seasoned with whatever seasonings you prefer before sautéing them if you like a little crunch. I leave the skin on the fillets when preparing them this way...just scale em. In another pan, brown butter with slivered almonds in it. Sauté some haricot verts (thin green beans) with some minced garlic. Make your rice of choice...I prefer a long grain or wild rice for this.
Make a mound of rice, then the beans, then the fish and drizzle the butter almond mixture over the top...poor mans Crappie Almandine! I made this last week as a special at my restaurant with Rainbow trout and had a lot of happy customers!

Cut filet in 1/2 vertically. Add garlic salt, pepper, tony chacheres, and horse radish mustard. Rollin with thin sliced bacon and bake/broil for 20 minutes in the oven. I cut them in 1/2 when they come out of the oven to make bite size pieces.

cut along the back bone as if you were going to fillet. Leave skin on, remove each side from backbone. Clean(rinse) well, season to taste. Get your charcoal in the grill white hot, lay fish halves, skin and scales down, and cook for about 10-15 minutes(depending on size of slab), when the meat flakes when touched with a fork, it's done. Remove from grill, drizzle with garlic butter and lemon juice from a fresh lemon wedge. Take fork, grip one end of the skin, slide fork along skin, and meat slides right off. ENJOY!

I call it "crappie on the half-shell"

Bake em! Spread your fillets with regular yellow mustard,put em in your favorite mix.(I love the Louisianan Fish Fry Mix) preheat oven to 350 degrees and bake until golden brown. A nice side of melted lemon butter goes super good. thumb

dip filets in egg wash then press into crump mixture to coat.place filets in glass baking dish,and drizzle in melted butter.
3.bake on top rack of preheated oven until fish flakes easily,about 15 mins.
