i have seen good recipes for crappie besides frying in the past but i did not pay much attention. but now i need to change my diet for health reasons. so this time i am paying close attention. need recipe for baking and/or grilling or any way of cooking besides frying. this time i will try them and make sure i write them down. thanks.

This is awesome! I believe it was posted by PondJumper. They come out very crispy. Don't cook a bunch because you will eat every single one of them.

I just dust them with a flour based fish fry, run them through a milk/egg wash, pour some cheap corn flakes, Tony Chacherey's (I can't spell it), garlic powder, and onion salt in a food processor and chop them up, then coat the fish with the corn flakes mix. Spray them down with olive oil and bake. I flip about 10-15 minutes and cook about 10 more. Come out pretty good. Also good warmed up. I cook 10 fillets at a time, my wife and I eat 4, and then I have 3 lunches.Microwave for 1 min.

Here's another vote for crappie tacos! My version... Pepop's Dilly Lime Crappie Tacos The recipe is about half way down the thread. BTW, that Salsa recipe is to die for when fresh garden tomato's cilantro & onion's are available.

shadrap, Google "en papillote" and look at the images. the method is great for baking a moist and flavorful fish dish. I've used it for years in restaurants/catering/ personal chef-ing etc. Enjoy.

You might try 'crappiecakes'. Get some Zatarins Crabcake mix from WalMart, follow the directions and that's it. Obviously, you want to substitute crappie for crab in the directions!

Zatarains Crisp & Bake for Seafood. Dip in egg and milk wash, roll fillets in Crisp & Bake then put fillets on aluminum foil in baking pan in 425 oven for 20 minutes. Drizzle lemon juice on them before eating.

I'll 2nd this, wife loves crab cakes made with crappie. I boiled the filets 3 minutes in crab boil & let them soak for 20 minutes before adding to mixture.

We like to wrap them in bacon, sprinkle some seasoned salt, either garlic or lemon pepper and bake at 350 til done.

i copied this recipe . have cooked it several times really good with a side of rice.
its the only baked crappie i have tried so far that i like .
