Peanut oil or cottonseed oil. Very tasty either way. Good luck!

Ill press coconut oil one more once, move up from peanut oil and get the best of what your frying. If your good with residual flavor left by traditional oil, then carry on by all means . . . . .

A lot of people use peanut oil because you can use it over and over but tell me this. If you are frying catfish in oil of any kind after about three or four cooking are you not cooking in fish fat ?

Coconut oil. Immensely healthier than canola or peanut oil.

Learned a lot here! I usually use peanut oil because I used to fry a turkey at Thanksgiving in it and that same oil would last a summer's worth of fish fries. I don't fry turkeys any more since I got the "Big Easy" cooker. Need to re-think my frying oil. I've heard about coconut oil, and that rice bran oil looks promising.

I use canola oil.
High smoke point and I recently read it was found to be better for you than olive oil.
