Thanks guys! It was actually her idea to go. Love that woman! Lol!
Joe, we used new orleans seasoned fish fry (by zatarans) and added about a cup of panko bread crumbs. I also soaked the fish in some La hot sauce before coating. Just make sure you squeeze out the excess liquid from the fish before tossing it in the fry mix.
