How do you grill catfish?

It's tough to grill unless it is a larger, tougher fish. Otherwise it just falls apart when it's done. I have had some success in the past grilling it on foil to prevent it from falling through the grates. Just make sure that you use some oil or spray to prevent it from sticking. I prefer to just blacken it with caramelized onions over a bed of rice. I prefer that to fried fish every time.

And "grilled" catfish I've had was cooked on a flat grill at a restaurant, not an open grate bbq type grill. I would think the meat is too soft and flaky to cook it on open grates.

Get a cast iron skillet or even a nonstick skillet HOT, drop in a big wad of butter, and then place your fish in the skillet coated with blackening seasoning or tony chachares. Wait until the fish is almost completely done before flipping it.

Grilling catfish is easy and healthy, if you are cooking in a pan or on a flat grill w/butter or oil you are frying it. Get a pan with a grill insert.  spray the grill with Pam to keep it from sticking. marinate in Italian dressing and season with whatever seasoning you like, put it in the oven or broil or on a grill. Cook for about 20-30 minutes depending on the thickness of the filet. You can also use a 50-50 mixture of Ritz and Goldfish crackers that have been put in a food processor and it will look similar to fried. BBQ sauce also works. You just have to get the fillet up out of the moisture that will cook out of it.

Garlic salt, Tony Chachere's, or Slap ya Mama sprinkle seasons on.Grill till white halfway thru the fish then flip it. Right before it is done on the other side coat it with some Lea & Perrins Worcestershire Sauce.This works well with some Hickory chips for smoke.

I use one of the seafood grills to keep it from falling apart. I generally use a dry seasoning and grill until flaky. Something like this. I think I got mine at Lowes.

I panfry in just a little olive oil in a wok. its fantastic. I just sprinkle the dried fillets with Tony Cacheres (and nothing else), then just cook it in the wok around 300F in a little olive oil. then I'll put the fillets in a tortilla with some cheese, spinach, and whatever else you want for catfish tacos. greatness.  shane

I prefer to watch people cook it.  Cause I can barely cook up a bowl of cereal. I always make sure good cooks are my best friends and well taken care of. I'm like... You can cook!!!

I bought a fish grill basket from academy and it worked well. I griiled with Bell peppers and onions and marinated for one hour in lemon juice. I used pepper, garlic powder, and cajun spice. It was pretty darn good.

Those fish baskets work and I almost recommended them, except they are a pain in the butt to clean afterwards.
