Here my 2cents for what's it worth....

Fish fillets were meant to be dropped in the grease at about 400 degrees. Well that's my thinking till the doc says a otherwise! rolfmao

Stripe Bass is an awesome fish to blacken. It is my favorite way to cook it. Fry the crappie and catfish - blacken the stripe bass.

Thanks for the ideas.
I Grilled them. Then pulled to the side and smoked them,
for 15 minutes.
Served with cabbage and rice.
Pretty darn good. My first time for Stripers.

For the bigger fish over 18 inches ( the overs on Texoma) I blacken them. For the smaller stripers under 18 inches ( These fish are only legal at Texoma) I bake them in Basil Pesto, as the fillets are too think for blackening.

To Blacken striper, Baste the fillet in melted butter. heat a skillet until melted butter is smoking. Cook the fillet 2 min on each side.

To bake in Pesto: Just baste the small fillets in basil pesto and bake for 25 min at 400 deg.

I've tried fried striper and I don't like it. It works if you have a nice batter like Beer batter but I eat so much fried fish ( crappie, Sandbass, LM & SM Bass) I don't do it for stripers.

I like catching them but Crappie yellow cat and small channel cat are for eating. Sandbass are pretty good if cleaned and fried rite off the stringer. But If I paid a guide 200-300.00 I would dang sure eat sripers and say they were good. Same with big ole blues. But all my fish swim in cornmeal.

Striper/hybrids grilled with some smokey oak wood. Place the grilled fillet on a bed of rice topped with crawfish touffe. food

I fry mine in Uncle Bucks Hot & Spicy fish batter & sometimes I put lemon pepper in with it as well...
