The last time I made rainbow trout I just gutted it and put it on the skillet with some butter, salt, and pepper. Once done the skin will peel off easily and the meat is easy to eat off the bones with a fork. Pretty darn good.

Yesrs ago before they started stocking them at so many public ponds, we would drive out to PK to fish for them. We would always take a cast iron skillet and some grease to fry them up. Just used a plain cornmeal (with a little flour) to roll them in. A little pepper and salt. We would cut the small piece of skin under the gills, pull the head back and pull towards the tail, all of the skin would come off at one time. Then just take out the little guts pouch and we were ready to go. Sure tasted good cooked right there at the picnic tables on an open fire, like a little shore lunch. Fried up some potatoes, opened a can of pork n beans and cut up a fresh onion, yum
