Make sure you post some of the ways you cook up them crappie. I have a friend from LA and have been introduced to boiled peanuts, peppered hams, fish gumbo, boudian and best of all Salvo's seasoning. I put Salvo's on just about everything. food

I heard fishing and hunting is good in LA but my friend never takes me. I think he likes his wife and kids more than me. nannyboo

Absolutely! If your in the area, just give me a heads up, we will meet up for a trip. I personally know the guy that owns the boat launch. They have a 2 story lodge, RV park, small store, baitstand and a pretty decent launch ramp. My camp is just about 1/3 mile from there. Just hope these perch straighten out a little here and get hungry. I think we may have a little to much shad in the complex right now.

We do eat well over here as my waist size will verify......
We have a local seasoning here called Uncle Leon's Louisiana seasoning that's a pretty good crowd pleaser.
I just had some boiled peanuts this past friday night that we did back in the fall and froze.
Fishing and hunting are both good here. My camping/fishing partner prefers Mississippi for the deer hunt though. I have heard the same for Texas though as well. Way back when I was a little tike, I used to live in Houston (late 50's/early 60's) and we did quite a bit of fishing there.
I always fillet my crappie and fry them. I make a 50/50 mix of cornmeal and flour. One thing I always do is soak my fillets in ice covered water, take them out of that and into the cornmeal/flour batter, then into peanut oil set at 350. When the fillets free float or the temp gets back to 350, I pull them and put them in a cardboard box with paper towels and immediately sprinkle them with Uncle Leon's or your choice of seasoning and they they go under a heat lamp. After the fish, come the fries and after that come the hushpuppies. I love it!
