I've seen some of their hooks that have the 3 degrees of offset. How do you think this helps/hurts your hook up ratio?

I figure it could help you 50% of the time or hurt you 50% of the time depending on how the hook is positioned. I don't think it would be beneficial to have the hook point going away from the area that is to be penetrated. However, that is just speculation and it would be hard to test.

The VMC's on the rapala DT 16/20 series and shad raps are pretty good. No complaints.

I like to offset hooks, and would often do that with pliers before VMC released those.
