In the cold weather, we are enjoying blackened stripe bass, some yellowfin tuna from my venice trip, and hasselback potatoes I saw on the food network. I only used cheddar for mine - see link below.

First, I melt butter and coat the striper fillets and put a healthy dose of "blackened redfish magic" on them. I took two hot iron skillets and put them on the grill. After they get hot I put a little extra virgin olive oil on the skillets. I put the striper in 1 and the other the yellowfin tuna. On the tuna, I pour some "Dale's Seasoning" - usually used for steak. Both don't take very long to cook, so keep an eye on them. At this point, I was melting the cheese on the potatoes. Now follow the next three illustrated steps
