So I have been trying to get my wife to learn how to fish and she has not yet wanted to. I even bought her an adios to use. Nothing. Today she sends me a text saying we should drop the kid off at my moms and go to Galveston for a fishing trip! Now I go to Galveston about once a month by myself for a few days and do pretty well I guess. But I need this trip to be epic, as in everywhere we go she at least catches something. Lately I have not been doing well in the marsh at the end of sportsman rd, where in Galveston area is an easy paddle, out of the wind for the most part and has a good amout of reds there? I'll give her a popping cork so it's easy I just really want her to hook into a red. I can always go to the causeway for trout and seawall for fatties. But those reds are something I want her to feel on the end of her line. All help will be appreciated

Use live bait, go on a day that has a little south wind in it (sure those bluebird post frontal days are beautiful, but not great for fishing). Wait at least 3 days after a front if you can.
She's really just going to be on the water with you and have fun with what you love. Make it a fun day, be jovial, laugh, giggle.. have her have fun day and don't worry about what ya'll catch. As long as she has fun, she'll want to go with you again.

As a life long fishing rat, I would just make it a relaxed fun time. We just wore the rat reds out in POC with the wind howling and the water like chocolate milk. Popping cork with live shrimp at the mouths of any drain and also drifting flats areas. Let us know how it goes. Hoping you have great success!

When you're trying to get someone hooked on fishing, quantity can matter far more than quality. If she's catching whiting, seatrout, small reds etc constantly, she won't be bored.

My wife is hooked on fishing, but til today she would rather catch a bunch of bait fish with a few keepers mixed in than wait all day for a bull red to hook up.

If you find that hot spot for reds only, let me know...As mentioned above if you are trying to get her interested in fishing take her to the "causeway for trout and seawall for fatties" if you have had success. Targeting a specific catch is going to lead her to disappointment. Get her out, enjoy the day even take her out on one of the piers instead of having her trying to maneuver a kayak on her introduction to saltwater fishing.
