I was given about 30lbs of a 200lb bull shark that was caught yesterday on my trip out of galveston. Whats the secrete to it? I fried some up after cleaning it and it was tough as leather. Deck hand had told me to put the fresh meat in ice water that had salt in it to help draw out the blood. I done that and it was in that brine mix about 16 hrs before i got home to clean it and bag it. Ive spent time bagging this fish in vacume sealed bags and now Im questioning if its good to eat or that I just dont know the trick???

Black tip is the only shark ill mess with to eat. It's the only one with a urinary trac. Shark overall sucks. My 2 cents.

Shark cooks quickly. If it cooks too long, it gets tough. I've also heard it lends itself much better to grilling (after soaking in marinade) as opposed to frying. Not sure if that helps. It's also high in mercury so I wouldn't make it a habit.

but you will eat a chicken or pork right?  Most folks believe shark are nasty because they pee thru their skin and yet theyll turn around and eat a critter like a chicken or a pig that eagerly consumes its own waste as well as waste from everything else on the planet . . . . . . Black tip is the only shark ill mess with to eat. It's the only one with a urinary trac. Shark overall sucks. My 2 cents.

Sharks and rays maintain osmotic balance by storing trimethylamine in their blood. It comes from urea and uric acids. It contributes to a strong taste in the meat. Soak it in cold water to draw this stuff out and it will improve the flavor. Some sharks taste better than others, thresher, bonnet head, black tip etc. You need to experiment with that bull shark.It should be edible. Oh, I just remembered mako is supposed to be really good. I've always cut shark meat into steaks and grill them just like beef steaks.
