cast iron pot, simmer an hour or two in broth with spices maybe some diced tomato and peppers until broth is gone, be sure an crisp that stuff up, i love crunchy carnitas parts. i've also fried it up on a disco but it's not the same as slow cooking. i guess you could cheat and put some carnitas in a crockpot and cook for a little while and then fry them up.
cabrito slow cooked the same way and then crisped up a bit sure is good. scoop that slow cooked tomato sauce on it too, mmmm. almost like a mexican version of sauce piquant.

Authentic idk but for sure good ..get a pork shoulder put holes all over it and stuff whole cloves of garlic in it , rub with olive oil, salt and pepper ..wrap it very well with foil bake at 275 for 8 hours ..when done shred the meat put on a tray and broil until crispy ..serve on corn tortillas , cilantro, onion and salsa ..we do this at least once a week at the station and its a hit .

nobody cooks a traditional old school carnitas ? Bummer cause they are awesome,its extremely hard to find "real" Mexican food with all the Tex-Mex clutter

This is authentic Michoacan carnitas(Mexican origin of carnitas) Its how you get there that makes all the difference The meat is never boiled,fried or baked like the Tex-Mex spin-off recipes suggest. Carnitas is a peasant dish usually prepared as part of a pig slaughter for celebrations.The pork is cooked in the rendered fat of the pig(lard)fresh whole chickens are also cooked in the same brew in between batch's of carnitas,unbelievable eating experience.Most gringo's cant handle the "other" tasty bits and usually settle for just the pork chunks Sorry its not in english,the finished product is the focus http://www.youtube.com/watch?v=OSIEbn95j-0

Nothing beats the added flavor of bones,everything tastes better that's cooked "on" or with the bone the meat naturally hung on. My wife makes it with pork & or beef ! Best when cooked with the bone in !
