While it's true that the amount of fishing pressure, which leads to tons of freebie baits for the carp to gorge on, has probably contributed to that shape, the main reason why so many European carp are that round shape is that back in the middle ages, some monks in Europe set about breeding carp specifically for the dinner table. They created strains of carp that were mostly if not entirely scale-free and that were the correct shape to fit perfectly on a dinner platter.

Today these strains are still dominant throughout much of continental Europe as you can see here.
