I went fishing last night at around 11 pm at Bryan Beach. I fished for 12 damn hours and only got two bites and no fish. I was using a 24 in leader with a 3 oz surf weight and 11/00 hooks with cut mullet as bait. I would walk out to about chest deep and cast out. I don't understand what I could have been doing wrong. I have never gone out fishing that long and not caught at least one keeper. Any advice?

There is lots that can be going wrong! Tides, wind, weather, uncooperative fish, and the list goes on. There are plenty of trips where I get skunked.
One possible problem I can see is if you are standing in chest deep water and casting, your bait might be landing on the sandbar. Make sure you are fishing guts. If you are already in chest deep water, that would be a better place for your bait than on top of a sandbar.

Sometimes the fish just are not there or are not hungry. HFT is correct. Always cast from a sandbar. What are you fishing for? Reds and Specks are a lot of time within 50 yrds of the shore. Now if your going for sharks, then you need to get it way out there. I always start out closer to shore and move out further as the day goes on.

Trick to not getting skunked as often ..... Throw out the big rig for large fish, and fish the wade gut with a smaller rod and a 1/0 hook to catch whiting, bait, a slot red once in a while, just to pass the time away.

I agree with both PFEROX and Huntingfortail... Use a smaller hook (between 3/0 and 6/0) and move a little closer to the beach when casting. Unless you are fishing for shark, chest deep water is great to fish as long as that chest deep water is in a gut... It makes all the difference. Cast just behind the breakers or in front of them by about 6'...

What were the tides doing all night? was their bait in that area... you are not far from the mouth of the Brazos...so you are in a good area generally. But were you in the sweet spot? where the bait was stacked up and along a rip or an eddy? those are the questions i'd look at.

Like Paul said, location and tides. Learn to read a tide chart and put your bait in the guts between bars, usually the 2nd and 3rd
