Give me your favorite fresh water fish batter. We like crappie,channel cat, and pond bass. I use corn meal with a little salt,pepper, and a dash of garlic powder. But want to try something new. Lets hear it.

We use corn meal and flour half and half,,, add pepper, ground garlic, cayenne, for the basic fry

I tried a recipe for corn dog batter one time and it came out of the fryer looking like Long John Silver's fish, but I lost the recipe and have never been able to duplicate it.

The simpler the better. Corn meal and salt to taste is the only way to fry fish. All that other is either Yankee influenced or from some cook book or cooking show trying to come with another idea to sell books or a program.

Dang I always want to try this and forget... im getting mustard on the way home tonight. ________________________ We use zatarans crispy southern with some tony's in it to liven things up. If your gonna make your own 1/2 corn meal 1/2 flour is good mix. Nothin I know of that is northern or yankee about zatarans.

Im not sure what fishslime is talking about but there are many ways to batter fish. Beer batter fish is great as is using a mix of corn meal. I have used pancake batter like you can do for onion rings and it turns out awesome.
If you want to try something new then try blackening. You will want to do this either outside or turn your fan on high.
-On the highest heat you can heat an iron skillet. Take your fish and roll in melted butter or cover the fillets in mayo -Season them heavily with Oldbay Blackening seasoning. -Take a couple of your fillets and place them in the skillet.Warning if the pan is hot enough there should be a good deal of smoke. This is normal. - The fish should only take a couple minutes each side. -Be sure to let the pan heat back up after you take your first few fillets off.

After egg wash...Coat in mustard powder before flour... fine corn meal...red pepper

I use cornmeal and flour, about a 4-1 ratio. Be sure to add salt and pepper to the mix or you can just use Old Bay seasoning. I also season the fish first before coating and frying

I like pioneer cornmeal 2 cups box of jiffy mix don't add flour jiffy is better, salt pepper and alittle ceyanne pepper. It's sweet ten salty then a bite at te end. Very good.

I like to coat my filets with Louisiana hot sauce and then dip in corn meal . This does not make the fish hot but adds a uniquiqe flavor.
