I used to make this bison jerky that all my friends and family loved, but I haven't made it in a very long time. I'm looking to make a batch soon, but I haven't been able to find a good source of bison meat in the San Antonio area. Does anyone know of any good places in the SA area where I can get some? I prefer the grass-fed minimally processed stuff if I can get it. Thanks.

There is a place in Mertzon,Tx that sells bison but its not close to San Antonio but they might ship if you are interested I will be back down there for work on Monday I would be more than happy to check for you.

Try Central Market. They used to carry Bison in Austin.

Robertsons is great I live three miles from there and we have at least a bag of it at all times my favorite is the mesquite.
