What settings should I be using for best performace. Fishing and navigation wise. I have yet to get that pretty 3D picture of the bottom structure that Navionics keeps showing in their demo and lit ... any help would be greatly appreciated.

The default settings aren't a bad start. Really the best thing to do is the hardest..
Go to the lake, and DON'T take a rod. Spend a few hours just adjusting the unit during real time use. Adjust things back and forth over an area until you get it to look clear and easy to identify structure they way you want.
If you take a rod, you have a tendency to stop and fish everything that you think you see and you never really get it dialed in.
Eventually, you will go through an ophthalmology type event - is this one clearer or this one, which is better one, or two...
After a bit, you will get it exactly where you want it for you.
