Soak in milk and Franks Red Hot sauce, or Texas Pete's, etc.
One package of Fish Fry mix (I know some are better than others but which one's escape me at the moment), and one package of Sweet Corn Bread mix.
Add some Cajun seasoning to that...Tony's, sometimes I'll use some Old Bay.
Peanut Oil
BAM, good stuff right there.

Bake or gril: Marinate in olive oil, seasoned salt, garlic, black pepper, lemom juice... No hot stuff for me.

This thread is making me hungry. Anyone eat crappie for breakfast? I do! Any left overs from the night before are real good cold. They make a great sammitch too.

A couple weeks ago I tried that beer batter recipe someone posted here and now my wife said she doesn't care if I NEVER fix crappie my old way (which she used to LOVE BTW)

My favorite is crushed up ritz crackers, I add a little cavenders greek seasoning (not the one with no salt) I dont soak them in anything, just put the fish in a baggie with the crackers and toss around and fry. adds a crispy outer and just the right amount of salt for flavor.

I mix 5 LBS yellow corn meal 8 oz salt 1 package spicy-hot fish fry mix. Not to hot for the kids puts a little flavor in the mix without over powering it.Put it in the freezer and you got mix for the year.

I make my own meal. Crunched and rolled saltine crackers,.....while the filets merinade in beat eggs and beer. Roll the merinaded filets in the meal, drop in 360 degree peanut oil, until golden. Squeeze a little bit of lemon on them, with a tiny bit of cocktail sauce. You can't stop eating these.
Need to improve my LMB fishing, running out of time.
