I'm looking for some advice on electronics. I currently have Lowrance HDS8 Gen 1 on my boat. With the lakes here in Texas being so low and my concern about navigation, I've been considering upgrading to Humminbird with their low water offset functions. Another big advantage of the Humminbird unit is the shading of depth ranges.

Would I be better off upgrading to Lowrance HDS Gen 2 or upgrading to Humminbird? Has anyone personally used both brands and which did you prefer and why? Any advantages of one over the other?

The two features you are interested in are a Lakemaster mapping software feature.
Lakemaster software only works with Humminbird units.

And since Lakemaster only works with Humminbird, that is why I am considering upgrading to the Humminbird units.

I understand if I want to use the Lakemaster Low Water Level feature, I would need to upgrade to Humminbird. However, since I don't have any experience with Humminbird units, I am asking for advice on Humminbird vs. Lowrance. Other than the Low Water features, what are some of the pros and cons of one over the other?

You have already learned the Lowrance HDS units operations. You already have transducers in place and other wiring. This should be taken into consideration.
I think you are better off with Lowrance and Navionics. I like the Sonar look and mapping look with Lowrance. Richer/Deeper look in my opinion due to their twisted pixel technology.

With low water conditions and more chances of shallow water fishing Humminbird Side Imaging has unbelievable performance in shallow water and the LakeMaster Maps are an amazing tool. I would look at the lakes you need to make sure LakeMaster has coverage and if you need examples let me know and I will get some for you. I love comparing Humminbird performance...they are an amazing tool and now you can add 360 Imaging that will take you to a whole new level of viewing what's around you. If you ahve any questions are want to see examples I'll be happy to share what I have seen on my unit.
