If you are looking for something under $500 you are going to probably have to get a used yak. The only new yaks under $500 that I know of are usually Pelicans. If you can find a used Ocean Kayak I would go with that. Check Craigslist and the classifieds on texaskayakfisherman.com

Look for a kayak in the 14-16 foot range for the LLM. With all that open water you're going to want a efficient hull design. If you can't find a kayak in that range then a smaller one like 12 will be OK. I wouldn't get anything less than 12 feet.
Wilderness Systems Tarpons or Ride series, Ocean Kayak Trident series, Native Watercraft Slayer, Redfish, or Manta Ray Series, Jackson Cuda series, and Perception Sport Pescador series are good kayaks.
I'm not sure how many used kayaks come up for sale in the valley, so be prepared to drive at least to Corpus.
Always wet test when buying a used kayak.

I have been looking for a used kayak in that price range as well for a very long time. They are correct that short of pelican you aren't likely going to get what your looking for. I bumped up my amount i'm willing to spend to at least 800 now. Even 500 for a used one you will be very hard pressed. I look on craigslist almost daily and their are not many, again only pelicans.
Happy fishing!

Fishing is the chance to wash one's soul with pure air. It brings meekness and inspiration, reduces our egoism, soothes our troubles and shames our wickedness. It is discipline in the equality of men--for all men are equal before fish
