Don't fillet a trout. Just gut them and take off the head if you want to and cook them that way. If you pan fry them the skin gets nice and crispy. You can wrap them in foil with a little garlic and butter in the foil with them and grill them too. I personally dont like trout but they look good Scott

The end of the article talks about preparing the trout, it says you don't need to scale the fish. Why not? If you bake it whole in the oven wouldn't you neeed to scale it? Also, everyone says use the smallest hook possible, can someone give me a size # to buy. Thanks for the help and sorry for the novice questions.

i tried some and they tasted like dirt! that was a couple years ago from the little pond by the ballpark....thats prob why!

Yes they do, scales are just very fine.
The size 8 hook is right on the money, make sure you also use the lightest line possible, 2-4 is ideal with 6 lb test being the max.

I caught one today and missed several. By far the easiest fish to clean. Also, I didn't know of thier teeth and rough as hell tongue lol

they might be considered scales but u dont have to worry about them. some people say to smoke the trout. not in a pipe tho

Yea when i cooked mine the other day i cut a fresh lemon and put the lemon juices on the fillet and then laid the lemon slices next to the fish , Sprinkled Pepper and salt , and for looks just put a tiny bit of rosemary and peprika and wrapped it in foil with a tiny bit of butter .

Try stuffing a nice sprig of rosemary and a pat of butter in the gut, and then wrap the trout in a strip of bacon. Secure it with a toothpick and throw it on the grill til the bacon is crispy. Oooooooyeah, lookout.
Probably the saddest thing you will ever see is a mosquito sucking on a mummy, Forget it little friend!! :-(

Did anyone notice that in Thursdays Dallas Morning News, in the Outdoors section, they said that because of the Alga blooms, they are not going to stock trout in the Brazos below PK Dam, or is this old news to everyone but me.

I spoke with the TPWD biologists and they said that the blurb in the Dallas Morning News was not right. The stocking of the trout will take place per the listed stocking dates from the link that started this thread. Just look under Possum Kingdom Tailrace and the dates will be listed. Looks like a great chance to catch some trout.
