Wright bacon I feel is the best, but the crispier you fry it the saltier it will be. If you are concerned about the salt you might want to try and find smoked pork belly. Plantation meat market near Springtown use to have smoked pork belly.

Minyards had Wright's bacon on sale, 10 lbs for 20 bucks. It was OK but about a third of it was cut about a quarter to a half inch thick. The rest was cut right. I vacuum wrapped the thick cuts for beans, greens, and other sides. It's good stuff.
