Hang onto it and have thanksgiving in July. Around this time of year I'll stock up on turkeys when they're cheap and about once a month or so, I'll pull one out of the deep freeze and make a nice feast. But, then again, we love turkey. food

Brine it overnight in salt water. Stuff however you like, season well with cajun seasoning and roast. very good

Remove the skin, season it with poultry seasoning (or your favorite seasoned salt) and wrap it in bacon - bake in the oven like you normally would.

I cooked one at thanksgiving and everyone loved it.

I've never done it with a store bought turkey, but my favorite thing to do with wild turkey (wide-open for whiskey jokes) is to filet out the breasts, slice them into strips and then chicken fry them with gravy. Do that with goose too. Mmmm Good! You could then smoke, roast, or whatever the thighs and legs on a store bought turkey. Sadly I don't currently have a smoker either, but I smoked our 18lb Xmas turkey on a rack in my Weber gas grill with wood chips in a little smoker box. Gotta watch your heat and not burn it, but it worked great.
