If you are a Gar, buffalo is delicious!!

I have heard carp/buffalo is actually fairly good to eat and I believe both are pressure cooked in salmon pattyesque styles.

they are commonly eaten along the Miss river. Google it.

I have seen them for sale in a local grocery store. I also have a friend that threatens to get scuba gear and follow us around because we release them, he could be filling up his freezer. He will tell me stories back in his day, to impress a girl they would cook buffalo, or they would have it for family reunions.

When I was a kid my folks use to buy buffalo from the fish market all the time. I was considered a adult eating fish because of the many fine bones you had to deal with. It is a very good eating fish but you have to pick thru quite a few fine bones.

I know a lot of ppl who say they are good to eat but no one knows how to clean them. Most of the old times I talk to say you put them on there Stomach cut down the backbone then cut down the ribs and the remove the skin. Never tried it b4 so don't know how it works. Wish I could find a old timer who could show me how to clean them the right way. There is a lot of buff meat out there. Some older lady told me you can clean it where there is no bones but could not understand how she was telling me to do it.

The meat is very white too. Not yellow like a carp.

I know I used to turn my nose up to drum until some one fileted one for me and it is pure white, not boney and is very good

The meat around the ribs is delicious but the previous poster is correct about the small bones.

big buffalo have big bones-- easy to find.

they make wonderful table fare; they are great eating, marbled like a rib eye beef steak. people around lake bob sandlin love them. some prefer the rib meat, most like all of the great fish.

My Granny used to cook the best buffalo!
The ribs were my favorite, she would use shake-n-bake and then fry it.

I know the vast majority of the TFF members do not favor the keeping of Buffalo, and they are a great sport fish. But the poster asked. In Alabama and all along the TVA chain lakes many people keep and eat buffalo.
Buffalo are good; if you know how to handle the bones. Many run the meat through a meat grinder twice; first on course and then fine. Some add seasoning to the second grinding. Then cook as you would salmon patties; or in any gar ball type recipe; with less seasoning. Some pickle buffalo to dissolve the bones ( if you like pickled fish). The rib cages are quite tasty and do not contain the smaller side bones. Deep fry them.
