You would want to plant cypress along the banks, right at the water's edge so the knees can come up in the water. Also take into account the shade the trees can make, good places to fish on sunny days.

Any emergent types of plants will do well along the banks. Just for ideas, I usually plant something tall and wall like where it can block the prevailing wind, on such an open area. Umbrella palm or giant reed are both good for that.

The other emergents can be planted in various spots to make for differing habitats.

Nothing wrong with cattails if that is what you want, but they spread quickly. In the pond pictured, they won't be able to get into the main water body as it is too deep, so they might be a safe choice.

Looks like fun just waitin' to happen....

Enhancing fish habitat with native aquatic vegetation or several of the structures already mentioned will promote forage fish survival.

You might also consider a feeding program which will help sustain a robust bluegill population.

I wish we could have talked when those pictures were taken. Next time, build underwater islands, irregular chanels, drop offs, humps, anything to alter the smooth shape of the bottom. It is very easy to do with a dozer, and requires very little extra effort.

Yes, the cypress should be planted around the bank lines...but do not place them on the dam. Preferable would be natural soil at the bank line if you have any.

structureless ponds dont typically work well unless you are raisin catfish

Structure is the pond bottom and the humps, ditches, flats, etc it consist of. Cover is the vegetation, brush, etc.

Adding vegetation could be a disaster. The right vegetation will find it's way in and create a good balance. The wrong vegetation could cost time, labor and money! To get in AND get out!
